2 cups long-grain parboiled rice

1/4 cup vegetable oil

2-3 tomatoes, blended or chopped

1 red bell pepper, blended

1-2 Scotch bonnet peppers (adjust to taste), blended

2 cloves garlic, minced

Teaspoon ginger, grated 1

1 teaspoon thyme

1 teaspoon curry powder

2 bay leaves

2 cups chicken or vegetable broth

Salt and pepper to taste



Rinse the rice thoroughly in cold water and set aside.

Blend tomatoes, red bell pepper, and Scotch bonnet peppers to make a smooth mixture. Alternatively, you can finely chop them.

Sauté Vegetables:

Heat the vegetable oil in a large pot over medium heat.

Add chopped onions and sauté until translucent.

Minced garlic and grated ginger should be added, and sauté for another minute.

Add Tomato Mixture:


Add the blended tomato, red bell pepper, and Scotch bonnet pepper mixture to the pot.

Cook the tomato mixture until it thickens and the oil begins to separate from the tomatoes.


Add thyme, curry powder, bay leaves, salt, and pepper. Stir well to combine.

Cook Rice:

Add the rinsed rice to the pot and stir to coat the rice with the tomato mixture.

Pour in the chicken or vegetable broth and bring the mixture to a boil.


Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for about 20-25 minutes or until the rice is cooked and has absorbed the liquid.

Check and Fluff:

Occasionally check to ensure the rice is not sticking to the bottom of the pot. If needed, add a little more broth or water.

Once the rice is cooked, fluff it with a fork to separate the grains.


Remove the bay leaves and discard them.

Serve the jollof rice hot, garnished with additional fresh herbs if desired.
